I do admit to using the term “pulled” because it is fashionable. But I love gulash, and I have always wanted to combine it into a dish that has the fresheness and goodness of a Vietnamese summer roll. So here, I pluck apart my leftover gulash meat and pack it into a flatbread wrap with the traditional Hungarian vegetable mélange of peppers, tomatoes and cucumber. You could possibly also add some sliced red onion, I preferred to omit it.
Ingredients for one wrap : a handful of leftover gulash meat, 1/2 small red pepper, 3-5 cherry tomatoes, 1/2 baby cucumber, 2 tbsp soured cream.
Shred the meat, using two forks. Cut the vegetables in half, then slice them. Arrange on the buttermilk flatbread and top with the meat. Mix the soured cream with a tablespoonful of the gulash sauce, rectify for salt and pepper and spoon onto the vegetables. Fold up on one side, roll up, and enjoy.
