Leeky Bean Hotpot

The combination of beans and peppers are supposed to be good for your iron intake. The leek was a leftover item in my fridge and the smoked tofu turned out to be the perfect topping.
Ingredients (serves 2-4):

Beans (I used pinto beans), soaked overnight
1 leek, cut into fine rings
2 light green bell peppers, chopped
2 garlic cloves, chopped
3 medium sized potatoes, peeled and cut into small cubes
250g smoked tofu

First, cover the beans which have been soaked overnight with water, bring to boil and boil on low heat, covered, for 45min.

Meanwhile, chop all the vegetables.

Sauté the garlic, leek and peppers in some rapeseed oil. Add the boiled beans and the potatoes. Add salt to taste, bring to boil, cover and boil on low heat for 15min or until the potatoes are tender.

Add the smoked tofu stir, and serve.
