Picnic potato salad

Serves 6

This potato salad is a picnic essential. We used to make this as teenagers for our Richmond Park (London)  picinics, alongside with ham & cucumber sandwiches.

Ingredients:
1,5kg waxy potatoes
1 jar of pickled cucumber
a handful of small cherry tomatoes
a big bunch of chives
1tbsp of Dijon mustard
1 tsp white wine vinegar
250g soured cream
1-2 tsp salt

1) Boil and peel the potatoes
2) slice the pickled cucumbers
3) quarter the cherry tomatoes
4) chop the chives
5) mix the mustard, vinegar, soured cream, and salt
6) mix in everything else
